Orange and Tarragon Chicken Recipe

Ingredients : Serves 4

450 g/1 lb/4 cups cooked chicken, cut into strips
90 ml/6 tbsp dry white wine
5 ml/1 tsp lemon juice
0.5 onion, grated
5 ml/1 tsp chopped tarragon
4 oranges, peeled and segmented

1 lettuce, shredded
1 bunch of watercress
50 g/2 oz/0.5 cup walnuts, toasted

75 g/3 oz full-fat soft cheese

150 ml/0.25 pt soured (dairy sour) cream
5 ml/1 tsp Tabasco sauce
Salt and freshly ground black pepper

Method :

Place the chicken, wine, lemon juice, onion, tarragon and oranges in a bowl and mix well. Cover and leave to marinate for 30 minutes. Arrange the lettuce and watercress on a serving plate. Remove the chicken and orange segments from the marinade, mix with the walnuts and spoon on to the lettuce. Mix together the cheese, soured cream and Tabasco sauce and season to taste. Stir in just enough marinade to give a pouring consistency. Pour over the chicken mixture and serve chilled.
