Chicken has never been more popular.
Economical, readily available, low in fat and quick to cook, there is
no end of tasty recipes you can choose. Free-range and corn-fed
chickens cost a little more but offer the best flavor, and obviously
you will pay more for select cuts, although you cannot beat them for
convenience. Remember that chicken breast is a delicate meat and can
dry out during cooking so make sure it is cooked gently or has
sufficient cooking liquid or sauce. For a change, use whole poussins
(Cornish hens) instead of chicken pieces so that everyone can enjoy an
individual bird.
Various cuts of turkey meat are also
widely available - from breast roasts to legs and mince - so it is no
longer just at Christmas that you can enjoy turkey meat. You can
substitute an appropriate cut of turkey in most chicken recipes,
perhaps allowing a little more cooking time.
Duck, pheasant, quail, partridge and
other game birds used to be for special occasions only but they can
now be bought ready prepared, or you can buy duck breast, which make a
delicious meal. |
