Turkey Slices with Cider Cream Recipe

Ingredients : Serves 4

500 g/18 oz turkey breast, sliced into four
1 egg, beaten
100 g/4 oz/2 cups fresh breadcrumbs

100 g/4 oz/0.5 cup butter or margarine

300 ml/0.5 pt/1.25 cups dry cider
150 ml/0.25 pt double (heavy) cream

Salt and freshly ground black pepper
2 parsley sprigs

Method :

Dip the turkey breast slices in the egg, then in the breadcrumbs. Melt the butter or margarine and fry (saute) the turkey until golden brown and cooked through. Transfer to a warm serving plate and keep warm. Stir the cider into the pan and bring to the boil, stirring to scrape up all the meat juices. Boil for 1 minute, then stir in the cream, season to taste and heat through. Pour over the turkey and serve garnished with the parsley sprigs.
